Fumé is a French term associated with Sauvignon Blanc (nick-named Blanc Fumé) from Pouilly-Fumé in France’s Loire Valley where fumé describes the terroir and the variety’s struck match, gunflint aroma. In New World regions it refers to Sauvignon Blanc that has been fermented or matured in oak; this is Woody Nook’s interpretation of the style. A complex, textural wine with lifted guava and citrus notes enhanced by quality French oak.
Winemaker's Notes
Woody Nook Wines Fumé 2024 was made from 3.86 tonne of Sauvignon Blanc hand-picked from the Gallagher block on the Woody Nook estate between the 12th - 15th March, 2024 at 13.0° baumé. The fruit was processed through a destemmer and pressed to tank for cold settling before racking to French oak puncheons (25% new) for barrel fermentation with wild yeast, monthly batonage and seven months oak maturation. Bottled in December 2024.
