This wine is a classic Margaret River blend of 70% Cabernet Sauvignon and 30% Merlot. It has a rich bouquet combining blackcurrant and capsicum aromas. The palate is medium to full bodied with cassis and blueberry flavours and cedary oak. The dusty tannins and finely balanced acidity not only give the wine great structure and palate length but also provide a cellaring potential of eight to ten years.
Cabernet Sauvignon and Merlot grapes used in this blend were picked on the estate on March 23, 2016 and February 25, 2016 at a Bourne of 13.9° and 12.2° respectively. They were both plunged in open fermenters for several days followed by several more in stainless steel tanks for malolactic fermentation. French oak barriques were used for their maturation over a 19 month period and then, after blending 70%/30%, 589 cases were produced in December 2017.
