Shiraz 2021

Predominantly sourced from Woody Nook Wines Estate's original 1982 plantings of dry-grown, old vine Shiraz.   This wine exhibits spice and a tinge of white pepper on the nose, leading on to a palate of black plums and mulberry enhanced by vanillin, coconut and a slight char from the heavy toast American oak barriques.

Winemaker's Notes:

Woody Nook Wines Shiraz 2021 was made from low yielding, hand-picked grapes from the two vineyards on the Woody Nook estate;  the non-irrigated, original 1982 Gallagher Block (62%) and the younger, 2007 planted, Joliffe Block (38%).   A total of 4.38 tonnes of Shiraz grapes were hand-picked on the 8th April, 2021, destemmed and crushed to an open fermenter.   162 litres per tonne of juice were drained off to concentrate the skins to juice ratio, innocculated with Syrah yeast and fermented on skins for twelve days with twice daily pump overs and hand plunging.   The wine was then pressed to tank to complete primary and malolactic fermentation before racking to 10 barriques (40% new Canton & Saury) for fifteen months maturation.   The wine was then filtered and bottled (unfined) in January 2023.   288 cases were produced.
