Tasting Notes

This wine is a classic Margaret River blend consisting of 81.5% Cabernets & 18.5% Merlot. It has a rich bouquet combining blackberry and bell pepper aromas. The palate is medium bodied with plum and blackcurrant flavours enhanced by maturation in French oak barriques (9% new). The soft tannins, fruit sweetness and finely balanced acidity provide a delightful wine for everyday drinking!

Winemaking Notes

Woody Nook Wines Cabernet Merlot 2023 was made from three parcels of estate grown fruit; 5.29 tonne of Joliffe block Cabernet Sauvignon machine harvested on the 6^th April, 2023 at 13.2° baumé, 1.38 tonne of Joliffe block Merlot machine harvested on the 6^th April, 2023 at 12.5° baumé and 0.48 tonne of Gallagher Cabernet Franc hand-picked on the 30-31^st March, 2023 at 13.6° baumé. The grapes were inoculated with BDX yeast and co-fermented on skins for fourteen days with twice daily pump overs before pressing to tank to complete malo-lactic fermentation (MLF), followed by seventeen months maturation in 22 French oak barriques, 9% new. Bottled in December 2024.
