Stone fruit aromatics of white flesh peach and nectarine, a palate of oatmeal, almond kernel and vanilla bean from the oak and a lingering, crunchy acidity to finish.
Winemaker's Notes
Woody Nook Wines Chardonnay 2022 was made from 1.65 tonnes of low yielding, estate grown fruit,hand-picked on March 1, 2022 at 11.6° baumé. Destemmed and pressed direct to oak - a single new D&J puncheon and two used Marsannay French oak barriques. - without sulphur addition for fermentation with ICV-D47. No malo, monthly batonage and seven months oak maturation to produce a complex and seamless Chardonnay. Fining, cold stablization, filtration and bottling took place in December 2022. Only 79 cases were produced.
