Winemaking Notes
Woody Nook Wines Rosé 2024 was made from two parcels of estate fruit; Tempranillo machine harvested on the 22nd February, 2024 at 12.4° baumé and east block Shiraz hand-picked on the 20th – 21st February 2024 at 12.8° baumé. A small component of puncheon fermented sauvignon blanc was added to the final blend for complexity and aromatics.
Free run juice, wild fermented in stainless steel, overseeded with Paradisi yeast to enhance aromatics and ensure a healthy ferment. The wine was chilled towards the end of ferment resulting in 3.5 grams / litre natural residual sugar in the final blend adding generosity and fruit sweetness to the mid palate.
287 cases were produced.
