Fumé Blanc 2021

Fumé is a French term for smoky and is associated with Sauvignon Blanc (nick-named Blanc Fumé) from Pouilly-Fumé in France's Loire Valley where fume describes the variety's struck match, gunflint aroma. In New World regions it refers to Sauvignon Blanc that has been fermented or matured in oak; this is Woody Nook's interpretation of the style. A complex, textural wine with lifted guava and citrus notes enhanced by quality French oak. 

Winemaker's Notes

Woody Nook Wines Fumé 2021 was made from 2.43 tonne of Sauvignon Blanc hand-picked from the Gallagher block on the Woody Nook Estate on the 2nd-5th March, 2021 at 12.4° baume. The fruit was processed through a destemmer / crusher and then pressed to tank for cold settling overnight before transfer to three French oak puncheons {S00lts barrels; Ana (new), Saury and Montgillard), for barrel fermentation with wild yeast, monthly batonage and eight months oak maturation. The wine was then carefully blended with stainless-steel tank fermented Sauvignon Blanc to tighten the palate and lift aromatics resulting in a 86% oak: 14% tank, 100% Sauvignon Blanc wine, bottled in December 2021.
