Tasting Notes
Hand-picked estate grown Chardonnay was pressed directly to new Darguad et Jaegle light medium toast French oak barriques for barrel fermentation on total solids, monthly batonage and eight months oak maturation to produce a complex and seamless chardonnay. Stone fruit aromatics of white flesh peach and nectarine, a palate of oatmeal, almond kernel and vanilla bean from the oak and a lingering, gentle acidity to finish.
Winemaking Notes
Woody Nook Wines Chardonnay 2025 was made from 1.09 tonne of very low yielding, estate grown fruit, hand-picked on the 27th Feb 2025 at 12.25° baumé. Whole bunch pressed direct to oak without sulphur addition for fermentation with NBC yeast, inoculated with Viniflora CH35 for full malo-lactic fermentation, monthly batonage and eight months oak maturation before fining, cold stabilization, filtration and bottling in November 2025.
Only 42 cases were produced.
