Woody Nook Wines Cabernet Sauvignon 2016 was made from 6.5 tonnes of low yielding, non-irrigated vines from the original 1982 planted Gallagher Block, hand-picked on the 10th March, 2016 at 13.6° baumé plus a dash of Malbec (2%). The grapes were destemmed and crushed before the must (skins, seeds, juice) was pumped to two separate open fermenters, innoculated with RX60 yeast and fermented on skins for seven days with a combination of twice daily pump overs and hand plunging. The wine was pressed to tank to complete malo before racking to 22 barriques (13.5% new French oak: Taransaud, Nadalie and 13.5% new Hungarian oak: Kadar), the balance second-use French oak, for twenty months maturation before filtration and bottling (unfined) in December 2017. 536 cases were produced.
