'Killdog Creek' Tempranillo 2021

Woody Nook Wines' 'Killdog Creek' Tempranillo 2021 (dubbed 'The Temptress') is a vibrant, sweet and aromatic example of the Spanish varietal.   5% whole bunches in the ferment add Turkish Delight and black jube high notes, supported by only a touch of French oak, allowing the fruit to be the hero.


Winemaker's Notes 

Woody Nook Wines Tempranillo 2021 was made from 4.32 tonnes of Joliffe Block Tempranillo (planted in 2007), hand-picked (370kgs) and the balance Selectiv machine harvested on the 23rd March, 2021 at 13.5°.   5% whole bunches were placed in the bottom of the open fermenter with the balance destemmed over the top, inoculated with CLOS yeast and fermented for thirteen days on skins with a combination of twice daily pump overs and hand plunging before pressing to stainless steel tanks to complete primary alcoholic fermentation and malolactic fermentation.   The addition of new Oenosylvia French oak staves to tank for five months (15% new oak equivalent) helped enhance the oak aromatics, the pH of 3.77 was deliberately left high to showcase the chalky tannins with the Tempranillo fruit being at the fore.   Fining, cold stabllization and filtration were carried out before the addition of grape juice concentrate (9 grams per litre residual sugar) and bottling in December 2021.
