Tasting Notes

This wine is a classic Margaret River “Bordeaux style” blend consisting of 81% Cabernet Sauvignon, 13% Merlot & 6% Cabernet Franc. It has a bouquet combining blackberry and bell pepper aromas. The palate is medium bodied with plum and blackcurrant flavours enhanced by toasty oak. The soft tannins and finely balanced acidity not only give the wine great structure and palate length but also provide a cellaring potential of upwards of ten years.

Winemaking Notes

Woody Nook Wines BDX 2021 was made from three parcels of estate grown fruit; 3.98 tonne of Joliffe Block Cabernet Sauvignon machine harvested on the 26^th March, 2021 at 12.6° baumé, 0.64 tonne of Joliffe Block Merlot machine harvested on the 23^rd March, 2021 at 13.6° baumé and 0.29 tonne of Cabernet Franc hand-picked on the 23rd March, 2021 at 13.9° baumé. The Cabernets were co-fermented with CSM yeast for twelve days with twice daily pump overs. The Merlot was inoculated with BDX yeast and fermented for fourteen days in a small open fermenter with twice daily hand plunging before pressing to tank to combine and to complete primary and malo-lactic fermentation (MLF). The blend was then matured in 14 French oak barriques (28.5% new) for nineteen months, before bottling (unfined) in January 2023.
