Tasting Notes
Fumé is a French term associated with Sauvignon Blanc from Pouilly-Fumé in France’s Loire Valley where fumé describes the terroir and the variety’s struck match, gunflint aroma. In New World regions it refers to Sauvignon Blanc that has been fermented or matured in oak; this is Woody Nook’s interpretation of the style. A complex, textural wine with lifted guava and citrus notes enhanced by quality French oak. This wine will change the way you think about Sauvignon Blanc!
Winemaker's Notes
Woody Nook Wines Fumé 2025 was made from 3.25 tonne of Sauvignon Blanc hand-picked from the Gallagher block on the Woody Nook estate between the 18th - 19th February, 2025 at 12.6° baumé. The fruit was processed through a destemmer and pressed to tank for cold settling before the premium free run juice was racked to French oak puncheons (25% new) for barrel fermentation with wild yeast, monthly bâtonnage and seven months oak maturation. Bottled in November 2025.
