Winemaking Notes
Woody Nook Wines Limited Release Rosé 2025 was made from estate Tempranillo, hand-picked on the 20th February, 2025 at 11.6° baumé. Only the premium free-run juice was used, wild fermented in stainless steel then overseeded with Paradisi yeast towards the end of ferment to enhance aromatics and to ensure a healthy ferment and dryish finish (less than 2.0 grams / litre).
