Cabernet Merlot 2019

This wine is a classic Margaret River blend consisting of 62% Cabernet Sauvignon and 38% Merlot. It has a rich bouquet combining blackberry and bell pepper aromas. The palate is medium to full-bodied with plum and blackcurrant flavours enhanced by toasty oak. The soft tannins and finely balanced acidity not only give the wine great structure and palate length but also provide a cellaring potential of upwards of ten years.

Winemaker's Notes

Woody Nook Wines Cabernet Merlot 2019 was made from two separately fermented parcels of Estate grown fruit; 4.35 tonne of Joliffe Block Cabernet Sauvignon hand-picked on the 4^th April, 2019 at 13.0° baumé and 2.4 tonne of Gallagher and Joliffe Blocks’ Merlot hand-picked on 22nd March, 2019 at 12.5° baumé. The Cabernet was inoculated with RX60 yeast and fermented on skins for seven days with twice daily pump overs before pressing to tank to complete malo-lactic fermentation (MLF) then maturation in 13 barriques (15% new French Nadalie and 8% new Kadar Hungarian oak), the balance second-use French oak for eighteen months. The Merlot was inoculated with ES488 yeast and fermented on skins for seven days in an open fermenter with twice daily pump overs before pressing to tank for MLF then maturation in 8 barriques (12.5% new Kadar Hungarian oak), the balance second-use French oak for eighteen months. The wines were then blended, cross-flow filtered and bottled (unfined) in December 2020.
