Rosé 2021

Tasting Notes
A delicate, vibrant pale pink hue, lifted rose petal, cranberry and candy floss aromas lead on to a generously flavoured palate, with just a hint of residual sugar. An estate grown, hand-picked, field blend of varieties well suited to this style and region. A refreshing wine, perfect for our climate and lifestyle.

Winemaking Notes
Woody Nook Wines Rosé 2021 was made from three separately fermented parcels of hand-picked estate fruit; Tempranillo harvested on the 25th February, 2021 at 12.2° baumé was destemmed then cold soaked for three hours at 2°C to extract the beautiful blush pink colour, Merlot harvested on the l 6th March, 2021 at 12.2° baumé and Shiraz harvested on the 12th April, 2021 at 12. l 0 baumé. The Shiraz component was drained off "saignee" from the premium Shiraz open fermenter after three hours at 150 litres/tonne, to both concentrate the skins to juice ratio in the premium Shiraz and add weight and colour to the Rosé.
All three parcels were fermented cold in stainless steel with Cross Evolution yeast to enhance aromatics. The Shiraz was chilled towards the end of ferment resulting in 5.5 grams / litre natural residual sugar in the final blend adding generosity and fruit sweetness to the mid palate.
235 cases were produced.
