'Timber Cutter's Cottage' Unwooded Chardonnay 2016

In the early 1900s, timber cutting was the main industry of the area surrounding Woody Nook; in fact a sawmill oncestood on the land now occupied by the vineyard. This unwooded Chardonnay has delicate, appealing characteristics of pear, lime and grapefruit, with a rounded, lingering finish.

Winemaker's Notes

On February 8, 2016 9.24 tonnes of Chardonnay grapes were picked on the new blocks of the estate at a Baume of 12.25 and brought straight to the winery from the vineyard, crushed, pressed and pumped into stainless steel, refrigerated tanks for settling. The clear juice was then racked to fermenters for alcohol fermentation, 100% in stainless steel tanks. (8 barrels were made of oaked chardonnay from the rest of these grapes.) This process took 24 days. The wine was then protein and cold stabilized and subject to a fining procedure. After this the wine was filtered and ready for bottling in July 2016. 119 cases were made.
